In finisher Email to receiver there shoud be option to "call" insert formelement identifier for Reply-To Recipients option, like for other options Recipients, Subject, Sender Address, Sender name.
So it's not possible to send mails where you can answer to the entered mail address by just hitting "reply" (without running into problems with SPF - eg. xxx@test.net as entered mail address).

Yes, that button is currently missing for the fields.
The good news is, you can use the variables. I checked it with reply-to:
