It is possible to create an element with certain fields, fill them out and change the element-type to something else which doesn't have that field. There are cases where that value is then still shown in the frontend but can't (easily) be changed in BE.
How to reproduce:- create a "text"-CE
- fill header and subheader
- change to a "form"-CE
- find that "subheader" is no longer shown in BE but its value will still be shown in FE
(Experienced this on 4.7.x using form but should exist similar in previous releases as well.)

I'm closing this one down, because there is no reliable way to tell "why" a field is not shown in the BE.
One could override TCA etc.
