Make TCA-select-fields without renderType work again (but deprecated)

Description
Extensions can have fields of type=select without renderType being set. For compatibility add a fallback but clearly mark that mode as "deprecated" so extension-authors add a proper renderType.
Also some fields in the core also need renderType to be added.
